Stephen King is really hard to get and George R.R. Martin is probably quite busy.  But still, I'd love to meet: Clive Barker, Todd McFarlane, Stan Nicholls, Neil Gaiman, Raymond E. Feist, Susan Cooper, Philip Pullman, Timothy Zahn, Katharine Kerr, James Barclay, J.V. Jones  I'm not sure how many of those (still) do conventions though...
